Lemon cheese cake recipe

Serves 10 – 12 (number of guests or portions)

This is a truly delicious lemon cheesecake with a silky-smooth filling that literally melts in your mouth. Prep is key with this one, as you can see the prep times are long with the chill. But trust me on this one, it’s well worth it. Adding lemon sour cream sauce is a luxurious addition to this or any other lemon cheesecake. This little number is definitely worth the wait and the effort that goes into preparing it. Don’t be tempted to take shortcuts, especially on the spooky side of things; it will ruin your final cheesecake. This delicious Lemon Cheesecake has always been a huge hit with me every time I bring it out and all the guests comment on how great it tastes. I’ve even gotten requests from friends and family to make this one for them for their own parties and dinners.

Ingredients:

Base:

  • 105g digestive biscuits, broken into fine crumbs
  • 90 g of finely chopped walnuts
  • 50g sugar
  • 75g butter, melted

Filling:

  • 896g cream cheese at room temperature
  • 250g sugar
  • 4 eggs
  • 50ml lemon juice
  • grated lemon zest from half a medium lemon
  • 10ml vanilla extract

Lemon topping:

  • 460g sour cream
  • 50g sugar
  • 2g finely grated lemon peel
  • 5ml vanilla extract

Method:

Base:

preheat the oven to 180 oC.

1. In a bowl, combine all base ingredients.

2. Press into bottom of 10-inch springform pan.

Filling:

3. In a bowl, beat cream cheese and sugar until smooth.

4. Add eggs one at a time, until all combined.

5. Add the lemon juice, lemon zest, and vanilla and mix until just combined, do not over mix.

6. Pour over base in twig pan.

7. Bake in oven for 55 minutes, or until center is almost set, remove from oven. While it cooks, prepare the topping.

Lemon topping:

8. In a mixing bowl, combine all the lemon topping ingredients.

9. Once the spring form has been removed from the oven, let cool for 5 minutes, then pour in the lemon topping.

10. Return to oven for another 10 minutes, then let cool.

11. Once cool, place in refrigerator overnight.

Serve a slice of Cheesecake and enjoy.

This is a complicated cheesecake, but there are other simpler and much FASTER cheesecakes that taste amazing available.
